* 1/4 cup Irish moss
* 2 cups cold water
* 4 tablespoons lemon juice
* Sugar
Instructions
1. Pick over and wash the moss. Soak for fifteen minutes.
2. Drain and add the cold water. Cook in a double boiler until syrupy.
3. If it is too thick, add hot water.
4. Strain, add the lemon juice and sugar to taste.
5. Reheat and serve.
